Ingredients

  • 2 cups warm water (85-90°F / 440g)

  • ½ cup granulated sugar (100g)

  • 1½ tablespoons dry active yeast (16g)

  • ¼ cup unsalted butter, melted (56g)

  • 1 tablespoon kosher salt (20g)

  • 6 cups unbleached all-purpose flour (875g)

Directions

  • Bloom the Yeast:
    Combine the sugar, yeast, and warm water in a bowl of a stand mixer. Give it a rest for three to five minutes to get foamy.
  • Add Butter & Salt:  Next, add kosher salt and the melted butter. Mix with a whisk
  • Mix the Dough: While the mixer kneads the dough for three to four minutes, gradually add flour, one cup at a time. There will be some shaggy dough.
  • Knead and Rise: Place the dough on a floured area and use your hands to knead it for a minute or two, until it becomes smooth. After putting it in a lightly oiled bowl, cover it, and let it rise for one hour, or until it has doubled in size, at room temperature.
  • Shape the Loaves: Set the oven’s temperature to 375°F. Cut the dough into two equal portions. Place each piece seam-side down in 9×5 loaf pans that have been greased. Flatten each piece into a rectangle that is 9 inches across. Roll it into a log. Once the dough rises to approximately ½ inch above the rim of the pan, cover and let it rise for an additional 45 to 60 minutes.
  • Bake: Bake, flipping the pans halfway through, for 25 to 30 minutes. The tops of the loaves should be golden brown. After 5 minutes of cooling in the pans, move them to a wire rack to finish cooling before slicing.
