110g active sourdough starter
20g olive oil

415g unbleached all-purpose flour
10g kosher salt
Directions
- Mix the Dough: Using your fingers or a dough whisk, dissolve the active sourdough starter in warm water in a large mixing basin. Whisk together honey and olive oil after adding them.
- Mix in Dry Ingredients: Fill the basin
with flour and kosher salt. Mix with a wooden spoon or your hands to produce a
shaggy dough. After a quick kneading, cover, and allow rest for half an hour. - Stretch and Fold: To help the dough produce gluten, gently stretch and fold it. Raise a corner, fold it over, then turn the bowl around and do it again. After 30 minutes, cover and let rest. Again, do the stretch and fold.
- Proof: After covering the dough, let it sit at room temperature for four to five hours, or until it becomes puffy and relaxed.
- Form the Loaf: Dust your workspace with flour. Roll the dough into a log and gently shape it into a 9 by 12 inch rectangle. Place the log seam-side down in a 9 by 4 inch loaf pan that has been buttered.
- Final Proof: Place a lid on the pan and let the dough proof at a cool room temperature for ten to twelve hours, preferably overnight.
